This study evaluated the acceptability of jackfruit seeds made into coffee. Sixty respondents, including coffee lovers, teachers, and parents, evaluated three samples of jackfruit coffee on attributes of appearance, aroma, body, and flavor. The respondents found all three samples to be acceptable. While there was no significant difference between the pure jackfruit coffee and 2-in-1 coffee samples, the 3-in-1 coffee was found to have significant sensory differences.
