Because the third cluster contains those samples with the best sensory evaluation we have concentrated on tihis cluster. Unfortunately we had to register that the peaks of the corresponding samples had only very low intensities. That means that these y-values (or volatile substances) are only as far useful for the characterisation of chicken-like taste as they aspire to a concentration minimum. They are not interesting for the chicken-like taste characterisation. But vice versa they are suitable for the description and characterisation of off-flavour notes. Similar consideration of the clusters for the 'hydrolysate-like' and 'off-flavour' impression proved this statement. Of course, it is very problematic to discuss these or related results without knowing anything about the chemical identity of the separated volatile compounds. Consequently we recently investigated our concentrates by means of directly coupled gas chromatography and mass spectrometry using a fused silica column with Carbowax \(20 \mathrm{M}\) as stationary phase for the separation of isolated compounds.
