Harvesting perishable crops before or after the right stage of maturity can have both positive and negative consequences: - Harvesting early can take advantage of high prices but results in lower yield and quality. - Harvesting late increases disease susceptibility and results in lower yield and poor quality due to deterioration. Climacteric fruits undergo a ripening-associated increase in respiration and ethylene production while non-climacteric fruits lack this ethylene-associated respiratory peak.
